About Us
About the Business
Whether you’re looking for somewhere to hang out all night or just want to pop in quickly with some friends, Chimaek is the place to be. We’ve tried every fried chicken we could get our hands on to truly hit the nail on the head with our recipes.
Chimaek has been a work in progress since the ‘90s when Riverside Korean Restaurant began. Our longevity over at Riverside started when we took the leap in 2006 and is a testament to the quality we’ve committed ourselves to. After learning from repetition and focusing on the science of food, we’re ready to introduce a new concept to the area that we know will quickly become a favorite.
Who’s Behind the Business?
Chimaek is owned and operated by Chef Bruce Kim and his wife Yujin Kim. Together they’ve built Riverside Korean Restaurant and Mr. Bulgogi to award-winning, local favorites. Now it’s time for their third and final project to take the spotlight and reach the same great heights as a Covington staple.
The History Behind Chimaek
Bruce Kim drove semi-trucks in Chicago for 10 years before diving into his dream world of food. Now that he’s found his calling, there’s no stopping him. How does he get each recipe perfect? He asks his mom, he experiments with flavor, and he listens to what customers are saying.
